Protein Brain Cake | Halloween Dessert

We are getting closer to Halloween! Cause a fright with this Halloween recipe horror, protein brain cake! Have a Happy Halloween!


For the Cake

350g of chocolate chips

? 6 eggs

? Apple sauce with no added sugar 300g

100g of instant oatmeal

2 scoops of impact whey chocolate

2 packets of yeast

? 15 drops of flavdrops vanilla

For the Custard

2 eggs

? 4 tbsp agave nectar

? Potato starch 40g

250ml of milk

? 8 drops of vanilla flavdrops

6 gelatine leaves

For the Raspberry Coulis

Zero raspberry syrup

? Drops of red dye


 1. Preheat the oven to 180°C

 2. Whisk the eggs with agave syrup, melt the chocolate and add your mix

3. Add instant oats, the whey protein and the yeast sachets, then mix until smooth

 4. Pour into two silicone cake molds and bake for about 20-25 minutes (depending on your oven, the aim being to make two cakes that came then be sculpted to the shape of a brain)

 5. Take the cake out the oven and let it cool

 6. For the pastry cream, boil the milk and oats, and drop vanilla flavdrops in a saucepan

7. In a bowl, beat eggs with potato starch, mix well and then add the milk

8. Add to the saucepan and cook on a low heat until the cream thickens

 9. Add the gelatine (follow the instructions on the packet) and then refrigerate

10. Take a cake and make it brain-like (make sure it’s oval)

 11. Using a small spoon make a crevice in the middle of the first cake leaving 1cm at the edges

 12. Stir and fill the hollow with Mysyrup raspberry, which has been mixed with a few drops of red food coloring

13. On the edges of the cake spread Mysyrup to serve as ‘glue’. Place the second cake so it attaches to the first, and then finish carving to it’s shaped like a brain

14. Take your pastry cream that should be very thick with gelatine, put it into a piping bag and draw zigzags to trace the brain vessels on the cake

 15. Finally, brush the mixture lightly with Mysyrup raspberry on top for the bloodied effect!

 16. Now it’s time to scare your friends and enjoy!
