Meal Prep Idea | Meat Ball Kebab Recipe

Summer’s here – when making your meal prep don’t miss out on the joys of kebabs and grilled vegetables!

You will need

225g Lean Beef Mince

1 Egg

225g Savory Rice (we used microwave packs)

1 Red Pepper

1 Courgette

1 Yellow Pepper

1 White Onion

3 Handfuls Fresh Spinach

1 Tbs Coconut Oil

Method

  1. Preheat the oven to 350°F
  2. Cut the peppers, onion, courgette into similar sizes
  3. In a bowl mix the mince and egg, split into 9 balls and place in the fridge to firm for 10 minutes
  4. Build the skewers adding meat balls, peppers, courgette and onions
  5. Place the skews on a baking tray also adding the left over chopped vegetables and drizzle with melted coconut oil and cook for 15 to 20 minutes
  6. To 3 lunch boxes add a handful of spinach, 75g cooked savory rice, 1 skewer and a third of the remaining vegetables
  7. Store in an airtight container in the fridge
