There’s just something about a gyros in the sun that’s irresistible.
If you’re after feel-good summer food, it doesn’t get much better than this. These easy homemade gyros pack in the protein as well as a whole load of flavor — I’m talking juicy chicken, creamy tzatziki, crunchy fresh salad, and, of course, a few crispy chips too. It’s an unbeatable combination all wrapped into one.
Top tip: if you’re cooking for veggie friends or family members, just switch out the chicken for halloumi strips. Sorted.
Makes 1
Ingredients
- 125g chicken breast
- 1/4 tsp paprika
- 1/4 tsp cumin
- 1/4 tsp coriander
- 1/4 tsp salt
- 1 tsp olive oil
- Lettuce (shredded)
- Red onion (sliced)
- 50g frozen chips
- 1 flatbread/wrap
For the tzatziki:
- ¼ cucumber (grated)
- ¼ cup Greek yogurt
- ½ tsp minced garlic
- Squeeze of lemon juice
- Fresh dill or parsley (finely chopped)
- Salt & pepper to taste
Instructions
First, make the tzatziki. Grate the cucumber and squeeze out excess liquid before placing it in a small bowl. Then add all of the remaining tzatziki ingredients, mix well to combine, and set aside.
Next, place the oven chips in an air fryer (or oven if you don’t have one) and cook according to packet instructions or until golden and crispy.
Meanwhile, heat a little olive oil in a frying pan. Season the chicken with paprika, cumin, coriander, and salt, and cook chicken over a medium heat until entirely white the whole way through with no pink bits remaining. Allow to cool slightly before slicing.
Warm up your flatbread/wrap and place it on a plate. Make a cut halfway into the wrap, then arrange your fillings into each quarter: one quarter with the sliced chicken, one quarter with the salad, one with tzatziki, and one with the chips.
Season with salt and pepper if you like, and a sprinkle of oregano if you want to get a bit more Mediterranean with it, then fold up and enjoy.
