This fresh watermelon and feta salad is the perfect summer meal prep solution. It’s super-simple to make and absolutely bursting with juicy flavor and crunchy textures.

The tangy feta works so well with the sweet watermelon; it’s a match made in heaven to spice up your salad game. On sunny days when you’re after something light and refreshing, this is one hundred percent the choice.

I highly recommend taking it to work for a delicious lunch you’ll look forward to all day, or making as a side for your next BBQ with friends and family. It’ll go down a treat, trust me.Serves 2

 

 

Ingredients

  • 300g watermelon (diced)
  • 120g light feta (cubed)
  • 10g fresh pine nuts
  • Fresh mint
For the dressing:
  • 5g honey
  • Salt and pepper to taste
  • Lemon juice

Instructions

1.

First, add the diced watermelon and feta into a large mixing bowl and gently mix to combine.

2.

Sprinkle with fresh mint leaves and then set aside.

3.

Now make your dressing by adding the honey, lemon juice, salt, and pepper to a small bowl and mixing well.

4.

Drizzle the dressing over the ingredients in the salad bowl, and then top with a handful of pine nuts.

5.

Enjoy immediately or portion up into containers for a refreshing lunch on-the-go.
