Stuffed Pancake Muffins

Ingredients
- 1 cup frozen blueberries
- 1 tsp honey (can use any low-calorie sweetener)
- a squeeze of lemon (OPTIONAL)
- 1 and 1/2 medium-sized banana
- 1/4 cup flour (I go with whole wheat but you can use any kind)
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 1 tbsp baking powder
- 2 tbsp egg whites
- 1 tbsp milk (I use 1%, but any kind works)
- 2 tsp honey (or use any low-calorie sweetener)
- 1/2 scoop protein powder (any flavor you like)
- 1/3 cup fat-free greek yogurt, plain
- 1/2 scoop protein powder (the remaining scoop)
- desired amount of Low calorie maple syrup or any sweetener (OPTIONAL)
- sprinkle of cinnamon on top
Instructions
Use olive oil or butter to grease the muffin tray before pouring your mix.
You can use the remaining half of the banana as a topping, but keep in mind the extra calories.
Also, you may use any other frozen fruit such as raspberries for your filling.
BAKING TIME: 350°F for 13-15 minutes.
Lastly, feel free to make these in large batches; seal them in an air-tight container in the fridge for up to 5 days. It is important to store them properly!
