Ingredients

  • Pickled red onion:
  • 1 red onion (sliced into thin half moons)
  • 1 cup rice wine vinegar
  • 1 tbsp granulated sugar
  • Lettuce Cups:
  • 1 lb ground chicken
  • A few large pieces of lettuce
  • Rice (enough to fill lettuce)
  • 2 tbsp neutral oil
  • 1 lb ground chicken
  • 1 jalapeno
  • 3 scallions
  • 3 cloves garlic (finely chopped)
  • salt and pepper
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp fish sauce
  • 1 tbsp sriracha
  • lime to taste
  • cilantro to taste

Instructions

1.

To make the pickled red onions, mix the sugar and vinegar in a separate bowl until the sugar dissolves.

In a mason jar, pour the vinegar/sugar mixture over the onions. Put on a lid. Place in fridge till ready to use.

To make the larb, heat a pan over medium-high heat and add the neutral oil. Sautee your chicken, garlic, jalapenos, and scallion together. Add salt and pepper to taste.

4.

Stir in the soy sauce, brown sugar, fish sauce, and siracha. Cook until sauce is reduced.

5.

Spoon rice and chicken mixture into lettuce cups.

Top with pickled onion, cilantro, and lime.

Notes:

  • Leftovers can be stored in an airtight container for up to 5 days. Perfect for meal prep.
  • In addition to cilantro and lime, try adding basil, mint, roasted cashews, or peanuts, and additional veggies like carrots and cucumbers!
