Ingredients
- 1 cup oats
- 1 cup of any flour (I use whole wheat)
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/2 scoop protein powder (I use MyProtein cinnamon cereal from the “Whey Fwrd” line. Vanilla and Cinnamon Cereal Impact Whey works too)
- 1 whole egg
- 1/4 cup unsweetened apple sauce (or mashed banana)
- 1 tbsp butter (I use light butter)
- 1/4 cup of any powder sweetener (I use stevia brown sugar)
- 1 small chopped apple
- Optional Icing Recipe:
- 1 tbsp cream cheese
- 1/2 scoop protein powder
- 1 tsp any milk (add more or less to adjust consistency)
Instructions
Bake at 350°F for 12-13 minutes.
Notes:
If you have parchment paper on hand, it is preferred over aluminum foil. You may also add chopped nuts as an additional topping.
Optional zip lock bag technique: You can add your icing in a bag, then squeeze it to one corner and cut the tip off to spread the icing over your cookies.
