Stuck in a rut and trying to mix your mid-week meals up?
Totally delicious, healthy and filling – this king prawn stir-fry is a great recipe for anyone looking for a quick, simple and tasty meal!
Ingredients
✓ 80g buckwheat noodles (I’ve used black rice & buckwheat ones here)
✓ 100g fresh raw king prawns
✓ 80g frozen peas
✓ 1/2 red pepper
✓ 1 clove garlic
✓ 1-2 tbsp coconut amino’s/tamari sauce
✓ Coconut oil for cooking
✓ Fresh coriander
✓Black sesame seeds to garnish
Method
#1 Heat a tsp of coconut oil in a frying pan over a medium heat
#2 Crush in the garlic clove and add the prawns
#3 Cook the noodles according to the instructions on the pack
#4 Slice the pepper into long, thin strips and add this to the pan with the prawns and frozen peas
#5 Sauté these until all of the veggies are softened and the prawns are completely cooked through
#6 When your noodles are cooked, drain the excess water and rinse with cold water
#7 Add these into the frying pan and pour in your coconut amigos. Gently toss everything together
#8 Serve topped with a few sprigs of fresh coriander and a sprinkling of sesame seeds.
