Sometimes it's best to go back to the basics, and we all know if you're on a calorie deficit and trying to hit your daily protein goal, chicken and rice is a staple. This Chicken & Rice recipe from Myprotein ambassador Stefano Parodi includes the classic meal with an onion salad and yellow chili peppers to add a kick. Let's check it out.

Ingredients: 

CHICKEN:

• salt • pepper • oregano • paprika • garlic powder • cumin • Italian seasoning • dark beer • soy sauce • olive oil • Aji Amarillo

Place your chicken thighs (or preferred pieces) in a Pyrex, add all ingredients, and mix together. Bake at 380F for one hour.

RICE:

• cilantro blended with 1/4 cup water • onion, garlic, and Aji Amarillo • 3/4 cup dark beer • rice and two cups water • salt • pepper • corn

Blend cilantro with 1/4 cup of water. Fry the onions, garlic, and Aji Amarillo (yellow chili peppers) together in a pot for four minutes. Add the cilantro blend and dark beer to the pot. Add rice and two cups of water. Add the salt, pepper, and corn to the pot. Cook covered on high for seven minutes and then cook covered on low for 15 minutes.

Stir every three minutes.

ONION SALAD:

• salt • pepper • olive oil

Mix raw onions with salt, pepper, and olive oil. Add the onion salad on top of your rice and enjoy!
