Ingredients

  • Turkey Sausage:
  • 1 tbsp oil
  • 1 lb ground turkey
  • 1/4 cup onions
  • 1 tsp dried sage
  • 1 tsp fennel seed
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Tacos, Eggs, + Toppings:
  • 12 street taco tortillas
  • 6 eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup salsa (jarred)
  • 1/2 cup sour cream
  • 1/2 cup plucked/chopped cilantro heads
  • 1 avocado (ripe); sliced

Instructions

1.

Add 1 tbsp of oil to a large pan.

2.

Add the ground turkey, onions, and seasonings.

3.

Cook the turkey until browned and fully cooked through (if necessary, drain any excess fat).

4.

Set aside (on low heat) OR pour into a serving bowl.

5.

Let the pan cool for a few minutes, then wipe out the remainder with a paper towel + keep the pan at the ready.

6.

In a separate pan, scramble eggs over low-medium heat to your liking. When achieved, set the pan to the side.

7.

Move “sausage” pan to low heat + throw in tortillas (as allowed – 1×1 or better!).

8.

– Once toasted, place on a serving plate (+ repeat till finished!).

9.

Assemble your breakfast taco to your preference + share the wealth with your friends!
