Broccoli isn't just a side dish to steam or stir-fry, you know!
Do something different with broccoli by incorporating it into a fresh, crunchy and colourful salad.
Ingredients
? 150g Broccoli
? 1 Clove Garlic
? Tsp. Coconut Oil
? Pinch of Chilli Flakes
? 1 Tbsp. Peanut Butter
? 11/2 Tbsp. Freshly Squeezed Orange Juice
? 1 Tsp. Soy Sauce
? Tsp. Brown Rice Syrup
? Small Clove of Garlic
? Pinch of Chilli Flakes
? Water
? Rocket
? Pomegranate Seeds
Method
#1 Cut the broccoli into small pieces and heat the coconut oil in a frying pan.
#2 Crush in the garlic clove and add in the broccoli. Sautee this until the broccoli is tender and a vibrant green colour. Add chilli flakes to taste.
#3 To make the satay sauce, mix the peanut butter with orange juice, soy sauce, chilli flakes and the crushed garlic clove and gradually add in water until you're left with a smooth, pourable consistency.
#4 Serve the broccoli on a bed of rocket and top with the sauce and some fresh pomegranate seeds.
