The fanciest instant noodles you’ll ever eat.

In the mood for something quick and satisfying, but want better macros than packet noodles? This one-pot chicken ramen is everything you need and more. Seriously, once you try this recipe you’ll wonder how you ever got by without it.

Packed with nearly 50g of protein and oodles of flavor, it’s a spicy little number to warm up your winter evenings or even lunchtimes. Minimal washing up, too.

Chicken Ramen

Serves 1

Ingredients

  • 300 g chicken breast
  • 1 pack plain instant noodles
  • 200 ml water
  • 1 free-range egg
  • 50 g mozzarella (grated)
  • 3 spring onions (sliced)
  • 50 g sweetcorn
  • 1/2 red chilli (sliced)
  • Sprinkling Nanami togarashi seasoning (optional)

Instructions

1.

First, dice the chicken breast and add to a frying pan with a little oil. Cook over a high heat until browned and completely cooked through.

2.

Add the instant noodles to the pan on top of the chicken, cover with water and simmer for a minute or so. Once the noodles have softened, break them up with a fork so that they’re evenly combined with the chicken.

Crack the egg onto the center of the noodles and sprinkle the cheese, chopped spring onion, sweetcorn, and chili slices on top.

4.

Cook for a few more minutes (until the egg white turns completely white), then season to taste, and serve up. So simple.
