Makes 1 portionIngredients
- 80 g fat-free Greek yoghurt
- 3 eggs
- 20 g plain flour
- 1/2 tsp. baking powder
- 1-4 FlavDrops (Vanilla)
- 25 g Impact Whey Protein (Vanilla)
- 3 rashers reduced-fat turkey bacon
- Handful spinach
- Drizzle Sugar-Free Syrup (Golden Syrup)
Instructions
Preheat the oven to 180C.
Combine the yoghurt, one egg, flour, protein powder, baking powder and FlavDrops in a bowl until fully combined.
Heat a large frying pan on a medium heat and spray with low-calorie cooking spray. Once the pan’s hot, spoon on your pancake mixture and cook on each side until golden.
Meanwhile, lay the turkey bacon on an oven tray and put into the preheated oven for 15 minutes.
To make the scrambled eggs, whisk the eggs and season with salt and pepper, and put in the microwave for 1 minute and 30 seconds.
Fold your pancakes into taco shapes and place them into a dish. Top with the turkey bacon, scrambled eggs and some finely chopped spinach.
Finish with a drizzle of Sugar-Free Syrup and dig in.
