Just when you thought pancakes couldn't get any better...

Deliciously cute, these Pancake Skewers from @healthy_floflo make for a super simple treat whether it’s Pancake Day or just a regular Tuesday...

And, packed with 17g of protein and just 177 calories per portion, they’re proof that pancakes can be macro-friendly.

Drizzle with Nutella or dust with icing sugar and you’ve got yourself one hell of a breakfast.

Makes 24 mini pancakes (8 skewers, 2 servings)

Ingredients

  • 2 scoops Pancake Mix
  • 100 ml oat milk
  • 200 g fresh fruit (Flo uses mixed berries and bananas)
  • Optional chocolate spread, powdered sugar, or whatever other topping you like

Instructions

1.

Add the milk and protein to a shaker bottle and shake well. 

2.

Pour the mixture into a squeezy condiment bottle. 

3.

Heat a frying pan with a little oil. 

4.

Squeeze the pancake mix onto the pan to make mini pancakes. 

5.

Cook each side for 45 seconds to 1 minute. Flip when the pancakes no longer stick to the pan. 

6.

Build the skewers by alternating between pancakes and fruit. Flo uses 4 pancakes per skewer. 

7.

Pierce through the middle with a skewer and arrange all the skewers on a plate.

8.

Top with your favorite toppings and dig in!
