Level up your chicken and rice.

These days plain old chicken and rice gets a bad rap, and we can see why. Yawn. But @hollyb_fitness has proved that it doesn’t need to be dull, and it can actually be full of flavor.

This is a packed lunch your colleagues will definitely be jealous of. Get out your Tupperware and get prepping.

Servings
Serves 1

Ingredients

  • 55 g basmati rice (weight when uncooked)
  • 130 g chicken thighs
  • 30 g teriyaki marinade
  • Handful broccoli
  • 2 spring onions
  • Sprinkle sesame seeds

Instructions

1.

First measure out your rice and cook according to packet instructions.

2.

Slice your chicken into strips and cover with teriyaki marinade (marinate in advance if you can).

3.

When marinated, fry your chicken until fully cooked through.

4.

While cooking your chicken, cook your veg of choice.

5.

When everything is cooked, plate it up and garnish with sesame seeds and spring onion.

But as a huge fan of carbs, if it’s not pasta or pasta-adjacent, she’s not interested. If she’s not in the kitchen, she’s tucked up with a book for an early night, or you’ll find her in the gym working up a sweat. Afterall, all those carbs require quite the appetite.
