Juicy Almond Butter Chicken Recipe

This crunchy almond crust locks in the moisture of this juicy meat, it can be served hot or cold and is an ideal recipe to make in bulk when meal prepping.


Almond Chicken Ingredients

  • 300g chicken breasts (cut into strips)
  • 1 Tbs (20g) Almond Butter (Crunchy)
  • 1 Scoop Buckwheat Flour
  • 1 Egg
  • 2 Tbs Flakes Almonds
  • Salt and Pepper

 

Almond Chicken Recipe

  1. Preheat the oven on 185oC
  2. Sprinkle half a scoop of buckwheat flour over the raw chicken strips until all sides are covered
  3. In a bowl mix the other half a scoop of buckwheat flour, almond butter, egg and salt and pepper mix together until a gloopy consistency
  4. Take the chicken strips individually and coat all sides in the almond butter mixture then place on a baking tray
  5. Once all chicken is coated and on the tray sprinkle with flaked almonds, salt and pepper and bake in the oven for 15 – 20 minutes until thoroughly cooked
  6. Once golden brown remove from the oven and serve or allow to cool and store in the fridge for upto 2-3 days
