You will never believe these cookies are made with beans!! Gluten free, high in protein, and full of chocolate goodness!
? 1 scoop of Impact Whey Protein – Chocolate Smooth flavor
? 1/2 cup canned white beans (130g / 4.5oz)
? 1/4 cup canned pumpkin (60g / 2oz)
? 3 T egg substitute (46ml)
? 1/2 t vanilla
? 1/2 t baking powder
? 1 T unsweetened cocoa powder
? 1 T white chocolate chunks
? 1 T dark chocolate chips
? Sweetener of choice (3-5 packets)
1. Drain and rinse beans
2. Puree beans, pumpkin, egg, and vanilla. Add some additional egg or milk if necessary to get smooth.
3. Stir in remaining ingredients
4. Use baking mat, parchment paper, or non stick spray. Drop batter onto cookie sheet.
5. Bake at 350 F for 8-10 minutes.
