Sweet Potato Protein Cake Recipe

 

If you’re looking for a soft sweet sponge to enjoy on your coffee break, why not try whipping up this easy to make sweet potato protein cake!

 

Ingredients

 

You’ll need 2 mini cake tins, or for 2 normal cake tins double the ingredients!

You’ll also need:

 

The Cake:

1 scoop of vanilla impact whey protein

1 scoop of Instant oats or Freekah flour

4 oz of sweet potato

1 tablespoon of granulated sweetener

Myprotein toffee or vanilla flavdrops

1 large egg

1 teaspoon of baking soda

30ml of milk

 

The Frosting:

 

100g of quark

1 scoop of vanilla impact whey protein

Toffee Flavdrops

 

 

Method:

 

Step One

 

Bake your sweet potato in the oven for 30-45 minutes.

 

When baked, remove the skin and allow to cool.

 

Step Two

 

Turn the oven to 300 degrees F.

 

In a food processor blend your sweet potato, instant oats, protein powder and milk.

 

Step Three

 

Whisk your egg and stir in into the mixture.

 

Stir in the baking soda and Flavdrops.

 

Step Four

 

Add into your cake tins and bake for 10-15 minutes.

 

Remove and allow each sponge layer to cool.

Step 5

 

In a separate bowl prepare your frosting by combining a scoop of vanilla protein, flavdrops and quark and mix well. Spread the frosting in between the cake layers and over the top.

 

Slice and enjoy!
