This warm and cold salad is delicious and nutritious! Made in minutes, a great time-saving tip is to make two batches and store the second in the fridge for the next day.

Spanish Salad Ingredients

  • 30g Avocado
  • 30g Sweetcorn
  • 30g Cherry Tomatoes
  • 3 Spring Onions
  • 30g Chickpeas
  • 30g Pomegranate
  • 4 handfuls Fresh Spinach
  • 1 tsp Coconut Oil

Topping options

  1. Cut the avocado into small pieces
  2. Wilt the spinach in a frying pan with coconut oil, salt and pepper
  3. Build the salad layers by placing the warm spinach in the base of the bowl
  4. Lie the vegetables in lines down the bowl
  5. Spatter with omega seed mix or walnuts
  6. Serve
