S’mores Cheesecake Cups Recipe

In need of a healthy, all-American dessert that packs a real protein punch? Well, these s’mores cheesecake cups are most definitely the answer.

The new s’mores flavored protein powder means that you can enjoy the taste of your favorite treat without derailing your diet. Our Impact Whey Protein comes with 18g of protein per serving, is low in fat, sugar and has only 3g of carbs — does it get any more delicious than that?

To be honest, these little s’mores bites make it even better. They’re made with low-fat and low-sugar ingredients and are super simple to throw together. Top with toasted marshmallows for the ultimate treat to be enjoyed post-workout, or when the after-dinner cravings strike.

Ingredients

For Cake:

  • 1 scoop of Impact Whey Protein in S’mores flavor
  • 8 oz. low-fat cream cheese
  • 1 egg
  • 1/2 cup nonfat vanilla greek yogurt
  • 1 tsp. vanilla extract
  • Sweetener to taste
  • 2 tbsp. mini chocolate chips or cacao nibs

For Crust:

  • 1/2 cup original Fiber One cereal
  • 4 tbsp. low-fat cream cheese
  • Sweetener to taste

For topping:

  • Mini marshmallows

Instructions

 1. Preheat oven to 325°F and grease a muffin tray with low-cal spray.

 2. Beat cream cheese and egg with electric mixer. Add yogurt and vanilla and continue to beat.

 3. Add protein powder and sweetener and beat on low until smooth. Stir in the chocolate chips.

 4. Blend cereal to create a crumb mixture. Mix together the ingredients for the crust in a separate bowl to the cake mix.

 5. Press the crust mix into bottom of muffin pan.

 6. Top with cream cheese filling.

 7. Bake in the oven for 25 minutes.

 9. Leave to cool completely and then refrigerate for around 2 hours.

 10. Top with mini marshmallows and place under the grill for a few minutes for the ultimate s’mores cheesecake cup!
