These healthy raw oatmeal raisin cookie bites are delicious take on raw cookies. The natural flavor of the raisins curb that sweet tooth and with the protein-rich peanut butter, pumpkin seeds, flax seeds give the bites a real depth of flavor. You will need:
- 50g peanut butter
- 60g raisins (soaked in hot water)
- 30g Omega seed mix
- 150g rolled oats
- 25g shredded coconut
- 20g cacao nibs
- 15g VitaFiber
- 7g Xanthan Gum
Raisin Oatmeal Cookie Bites Recipe
Firstly start by soaking the raisins in hot water – just enough to cover the fruit – for 10 minutes, then mix in the VitaFiber and Xanthan gum
Combine the raisin mix with all the ingredients into a food processor; pulse until everything is well incorporated and starting to stick together
Pour it into a bowl and place in the refrigerator for 10 minutes, or until the nut mixture has chilled and firmed up slightly
With damp hands, form 1 tablespoon of dough into a ball, squeezing it until about 1-inch wide and very compact. It’s helpful to have a bowl of water handy since the mixture can get sticky and it’s easier to have wet hands when handling
Continue with the remaining nut mixture, placing the balls on a plate or parchment lined sheet
Chill the cookie bites until ready to serve or store in an airtight container in the refrigerator to snack on throughout the week.
