No Bake Vegan-Friendly Easter Cookie Recipe

These crunchy, chewy, refined sugar free chocolate cookies are so good no one will be able to eat just one! And they are so simple and quick you will not mind spending 10 minutes making them.


No-Bake Easter Cookie Ingredients

 

  • 100g Cacao Buttons
  • 5g Chia Seeds
  • 8 Dried Apricots
  • 2 tbs Honey
  • 1 tbs Cacao Nibs
  • 15g Cornflakes (Crushed)
  • 5g Coconut (Shredded)
  • 10g Whole Almonds (Thinly chopped)

No-Bake Easter Cookie Recipe

  1. Melt the Cacao Buttons in the microwave until smooth
  2. Chop the apricots into small pieces
  3. Once the cacao as melted add everything together and mix well
  4. To a silicone muffin tray add a spoonful of the mixture into the base of each and press the mixture flat
  5. Sprinkle with left over bits of dried fruit and nuts and leave for 2-3 hours to harden
  6. Once firm they can be kept in an airtight container for 5-7 days
