Breakfast Recipe | Low Carb Casserole Muffin

These meaty low-carb muffins will curb any morning hunger and taste so delicious one will not be enough! They are in ideal on-the-go healthy breakfast.

Low Carb Muffins Ingredients

  • 4 Large Eggs
  • 50g Raw Green Beans (Chopped)
  • 4 Chicken Sausages
  • Chilli Flakes (Optional)
  • Spray Oil
  • 100ml Milk (or Nut Milk)

Low Carb Muffins Recipe

  1. Pre heat the oven to 160oc and spray the muffin tins with spray oil
  2. To a large bowl add eggs, milk and salt/pepper to taste and whisk all together
  3. Cut up the chicken sausages into clumps and add to the batter
  4. Add the chopped vegetables and mix thoroughly
  5. Pour the mixture into the muffin tray and place in the oven for 20 -25 minutes
  6. Once golden brown remove from the oven and allow to cool
  7. Store refrigerated in an airtight container for up to 3 days
