Christmas Recipe | Low Calorie Cauliflower Mashed Potatoes

Mashed potatoes is a staple ingredient for many Christmas dinners in the US. However, it’s usually made with high calorie toppings and made with butter and sour cream, which isn’t great if you’re trying to watch your macros. Here’s a healthy low calorie alternative, so you can enjoy your Christmas dinner without having to worry about the macros too much!


✓ Raw cauliflower 1 cup

✓ Vegetable stock 1 cup

✓ Two tablespoons of plain fat free Greek yogurt

1 whole garlic clove roasted with olive oil

✓ Salt and Pepper for toppings


 1. Cook the cauliflower with the vegetable stock in a saucepan over a medium heat until it softens

 2. Transfer the cauliflower into a food processor or blender. Do NOT drain the cauliflower before doing this – you want to keep the liquid it has been cooked in

 3. Add the Greek yogurt to the blender/food processor and a ¼ cup of reserved stock. Then blend until smooth. Make sure to scrape the sides and add more stock if required

 4. Season with salt and pepper for taste
