Healthy Snacks | Sweet Quinoa Mini Muffins

A delicious treat with few carbs – perfect!

Our Sweet Quinoa Mini Muffins are easy to make and simple using up old bananas and store cupboard ingredients. They can be eaten cold on the go or warm served with natural Greek yogurt and cinnamon.




– 2 oz Quinoa (uncooked)


– 1 Tbs Honey


– 1 Old Banana


– Few Coco Nibs (Optional)


– 1 oz– Crunchy Peanut Butter


– 1 Tbs – Stevia (Optional)


– ½ Tsp – Ground Cinnamon (Optional)





a) Firstly start by cooking the Quinoa and adding 1 Table spoon of sweetener to the water


b) Mash the banana with a fork and add the honey


c) Once the quinoa is cooked (while still warm) mix all ingredients together and spoon the mixture into silicone muffin trays and place in the oven on 180oC for 12 to allow a golden crust to form on the top


This recipe will make 8 mini muffins or 4 large muffins and can be frozen for 3 months or kept in the fridge for 3 days
