Healthy Lunch Idea | Spiralized Veg & Poached Chicken Recipe

Spiralizers are all the rage and to make life even easier the supermarkets have started selling pre-cut vegetables. This dish is delicious hot or cold and is great to take leftover to work for the next day.

You will need

1 Courgette

1 Medium Carrot

150g Chicken Breast

1 Tbs (12g) Green Pesto

1 Tbs Coconut Oil


  1. Poach the chicken in salted water for 17-18 minutes until thoroughly cooked
  2. Using a spiralizer cut the carrot and courgette
  3. Place a pan on medium heat and spoon in the pesto and coconut oil mix together
  4. Add the spaghetti vegetables to the pan and cook for 4-5 minutes
  5. Cut the chicken into pieces and mix in with the veg and serve
