When your favorite treats are not the best for your health, make them healthy and don’t wait until cheat day! These peanut crusted chicken strips are delicious, low-carb and the chicken inside is still juicy.

Healthy Chicken Nugget Ingredients

200g chicken breast
50g peanuts
25g Instant Oats
1 egg
Salt and pepper

Healthy Chicken Nugget Recipe

Firstly cut the chicken breast into strips and roll in instant oats until completely but lightly covered

To a food processor add the peanuts blend down until a crumb consistency

Take 3 plates:
Plate 1 – Add the ground peanuts to the instant oats together with salt and pepper
Plate 2 – Crack in the egg and whisk
Plate 3 – Leave empty ready for the crumbed chicken

Taking your dry chicken dip in the egg wash and then roll in the peanut and oat crumbs

Then onto the third plate (these can be stored in the fridge, covered, for up to 2 days)

To cook – Place on a baking paper lined tray and cook for 20-25 minutes on 180oC. Serve with mixed salad.
