Goji Nut Caramel Slice | Raw Recipe

These goji nut caramel slices are easy to make and are absolutely delicious! Though they’re best-suited as a pre-workout snack due to the calorie density, they’re full of good fats which helps promote a healthy metabolism. The base is also raw and they’re super easy to make!

Goji Nut Raw Recipe Ingredients


  • 8 pitted dates
  • 8 dried apricots
  • 3 cups of desiccated coconut
  • Handful of goji berries
  • 1/2 a cup of melted coconut oil
  • 1 cup of cashew nuts and a handful of Brazil nuts
  • 1 teaspoon of vanilla been paste or essence
  • 1 tablespoon of water
  • 1 tablespoon of peanut butter


Chocolate topping:

  • 100 grams of cacao butter, melted
  • 30 grams of cacao powder
  • 1/4 of a cup of maple syrup/ agave syrup/ honey


Goji Nut Raw Recipe

Place all ingredients in food processor and make sure nuts are all chopped as finely as possible. The mixture should be slightly sticky but not watery.

Add a tablespoon of water if nuts are becoming hard to blend, and add the peanut butter for extra flavor.

Line a square baking tin with baking paper. Spoon all of the nutty mixture onto the baking paper and use your hands to firmly pack it down so that it’s even over the whole tray.

Place in freezer for 10 minutes – in the meantime you can start to make the healthy chocolate topping.

To make the topping gently heat the cacao butter, then stir in the cacao powder and maple syrup to add sweetness.

Mix well until all of the ingredients are melted, and taste to make sure it’s sweet, as the maple syrup adds the caramel flavor. Stir in coconut oil to topping to help harden once placed in the fridge.

Once combined mix and pour onto the cool base that’s been in the freezer. You can use a spoon to get this mixture into all of the corners then place in fridge for 20 minutes until topping is completely hard.

Chop into 12 pieces, then enjoy – store any extras in the fridge.
