Use any leftover vegetables after a roast dinner to create this delicious Frittata!
It can be served warm or cold and it’s a great portable snack or addition to your evening meal with meat/vegetables and salad!
– 3 Medium Eggs Whole (Alternative- 4 egg whites)
– 1 ½ F oz Skimmed Milk (Alternative – Almond milk)
– 3 slices Wafer Thin Ham
– 2 Oz New Potatoes
– 2 Oz Cooked carrot and swede
– 2 Oz Broccoli
– 1 cup Spinach
a) Whisk the eggs and milk together and pour into a hot frying pan sprayed with low Calorie spray. Once egg mixture is in, turn the heat down to low
b) Evenly sprinkle all the leftover mixed vegetables and meat, cook on the hob for 10 minutes then finish off under the grill for 5 minutes.
Once cooled can be stored in the fridge for up to 2 days!
