Thanksgiving Recipe | Sweet Butternut Squash Soup

Here is a real winter warmer of a soup that can be left in the slow cooker for hours and will only get better as it cooks. When your Thanksgiving guests arrive, why not serve this soup up with some nice crusty bread and a coconut oil swirl?


Butternut Squash Soup Ingredients

 

  • 1 butternut squash
  • 2 sweet potatoes
  • 1 large onion
  • 1 pint of chicken stock (fresh or cubed)
  • 1 tsp ground garlic
  • Salt and pepper
  • Coconut oil (optional)

Butternut Squash Soup Recipe

Cut the butternut squash into inch-sized cubes, do the same with the sweet potatoes, and add to a large pan

Quarter the onion and add to the pan

Sprinkle in the ground garlic, salt and pepper

Pour over the chicken stock bring to the boil for 15 minutes

Once the vegetables are cooked blend with a hand blender until smooth

Check for seasoning and serve

Tip: A nice addition is a teaspoon of coconut oil stirred in, to add a silky richness to the dish
