Clean-Eating Kebabs | Chicken & Pineapple Recipe

The sweet pineapple pieces combined with the savory peppers are succulent and satisfying. They can be served warm or cold and are a perfect healthy BBQ recipe!

You will need

250g Chicken Breast

½ Canned Pineapple Chunks

½ Red Pepper

½ Green Pepper

½ Yellow Pepper

2 tbs Coconut Oil

2 tbs Honey

1 tsp Salt

1 tsp dried Parsley

Method

  1. Place a baking tray with the coconut oil on in a preheated oven to 350°C
  2. Chopping all the vegetables and chicken into similar sized pieces
  3. Open the pineapple chunks and drain off any liquid
  4. Build 10 kebabs by placing the ingredients on the skewer alternating each time
  5. Once all are made drizzle with honey
  6. Sprinkle with salt and dried parsley
  7. Removed the heated try from the oven and place the kebabs on the tray
  8. Cook for 16-18 minutes until thoroughly cooked
