Pumpkin Gingerbread Christmas Cookies Recipe

These soft sweet gingerbread cookies will be a real crowdpleaser when entertaining friends and family. This low sugar, spiced treat is sure to be a winner to start your festive season!

Christmas Cookies Ingredients


  • 100g plain flour
  • 25g Toffee flavor Impact Whey Protein
  • 2 tsp ground ginger
  • 1 tsp bicarbonate of soda
  • 30g smooth Peanut Butter
  • 25g pureed pumpkin
  • 10g stevia
  • 1 tbs honey
  • 1 egg[/su_list]

Christmas Cookies Method

Preheat the oven at Gas 4, 350F

Mix together the peanut butter, egg, stevia, honey and pumpkin puree

Mix all the dry ingredients together, flour, whey protein, ground ginger and bicarb

Combine the two bowls and roll into a dough ball (Note: If the mixture is too dry add a few tablespoons of water)

Place the dough on a floured surface, roll to ½ inch thick then cut out with a shaped cutter

Put the bread shapes onto a greased baking tray lightly brush with egg

Cook for 10 – 15 minutes until golden brown

Once cooled they can be stored in an air tight container for 2 days
