Pimp up your chicken with this rich garlic Cashew Butter Chicken sauce.
The perfect accompaniment to wholemeal pasta and can be served warm or cold – have some for dinner and save some for tomorrow’s lunch!
– 5.5oz Chicken breast Pieces (Alternative turkey breast)
– 1 oz Whole wheat pasta
– 2 Tbs Cashew Butter
– 1Tsp Garlic Flakes
– 1 Tbs Honey (Alternative zero calorie syrup)
– 1 Chicken stock cube
– ½ Cup Boiling Water
a) Mix together all the ingredients into a thick paste, coat the chicken, oven cook for 25 minutes on 180°C, making sure the bowl has a lid or covered in tin foil
(Spinach is a great addition to this recipe)
b) While the chicken is cooking, boil the kettle and cook your protein pasta following the instructions on the packet
c) Once everything is cooked remove the chicken from the bowl and add a little boiling water to the leftover juices and sauce in the bottom, mix together until it makes a runny sauce then pour it over the cooked pasta and serve!
