Carrot & Coriander Soup Ingredients
- 1 tbsp coconut oil
- 1 medium onion (chopped)
- 450g carrots
- 1 tsp ground coriander
- 2 pints vegetable stock
- Salt and pepper
Carrot & Coriander Soup Recipe
To a heated pan add the coconut oil and chopped onion and allow softening
Cut the carrots into slices and add to the pan
Make the vegetable stock and pour over the carrots and onion
Keep on a medium heat until carrots have softened then blitz with a hand blender or food processor until smooth
Add salt and pepper to taste then serve!
