Carrot Cake Bars

Carrot Cake gets a makeover! All the flavor, but with added protein, less fat, and no added sugar! These carrot cake bars really are delicious!


Ingredients

✓ 1 scoop Impact Whey Protein – Vanilla flavor

✓ 1/2 cup oat flour (55g / 2oz)

✓ 3 T egg substitute (46ml)

✓ 1/4 cup unsweetened applesauce (55g / 2oz)

✓ 2 T unsweetened almond milk (30ml)

✓ 3/4 cup finely grated carrot (75g / 2.5oz)

✓ 1/2 t baking powder

✓ 1/2 t cinnamon

✓ 2 T chopped walnuts (14g)

Sweetener to taste (optional)

Method

1. Peel and grate carrots – set aside

2. Mix wet and dry ingredients in separate bowls and then combine

3. Stir in grated carrot and chopped walnuts

 4. Pour batter in 5×7 baking dish coated with nonstick spray

 5. Bake at 350 for 30 minutes

 6. Eat plain or top with cream cheese + vanilla extract + sweetener
