Banana Chocolate Chip Protein Muffin Recipe

These banana chocolate chip protein muffins are the best tasting, healthy recipe we have ever made! They’re moist, have a muffin consistency, and have great flavor. Of course they are even better warmed up with a tsp of light butter.

Banana Chocolate Chip Protein Muffins Ingredients


  • 4 over-ripe bananas
  • 2 eggs
  • 1 egg white
  • 1/2 cup coconut flour
  • 1 scoop Impact Whey Protein in banana or vanilla flavor
  • 3 T coconut oil
  • 3 T unsweetened Honey
  • 2 T vanilla
  • 1/8 cup water
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/4 c dark chocolate chips (optional)

Banana Chocolate Chip Protein Muffins

Preheat oven to 350 F

Place muffin liners into muffin pan, spray inside of liners

Mash bananas in medium sized bowl

Mix in eggs, egg white, coconut oil, honey, vanilla, and water, stir until incorporated

Mix in coconut flour, baking powder, and salt. Batter will be thick, mashed potato-like!

Scoop batter into 16 muffin holders – fill 2/3 full, they do not raise

Top each muffin with a few chocolate chips, press down onto muffin

Bake 35-40min at 350F until knife comes out clean
